INGREDIENTS
1 oz (30ml) Cognac
1/2 oz (15ml) fresh lemon juice
1/2 oz (15ml) simple syrup (1:1 sugar & water)
3 oz (90ml) Champagne (or other dry sparkling wine), chilled
Lemon twist, for garnish
METHOD
Add cognac, lemon juice and syrup into a cocktail shaker with ice.
Shake until chilled.
Strain into a chilled champagne flute.
Top with chilled champagne.
