INGREDIENTS

40ml gin (or vodka)

20ml elderflower liqueur

25ml fresh lemon juice

5ml honey syrup

1 egg white (optional for a silky foam)

Soda water

Ice

METHOD

Dry shake all ingredients (no ice).

Add ice & shake again until chilled.

Strain into a tall glass.

Top with soda water.

Garnish & enjoy.
