Tropical Nojito

Ingredients:

·         Fresh mint leaves (8–10)

·         ½ lime, cut into wedges

·         Pineapple juice (chilled)

·         Sparkling water or lemonade

·         Crushed ice

·         Fresh pineapple wedge (to garnish)

·         Extra mint sprig (to garnish)

 

Method:

1.      Add the mint leaves and lime wedges to a tall glass.

2.      Gently muddle to release the mint oils and lime juice.

3.      Fill the glass with crushed ice.

4.      Pour over pineapple juice until the glass is about ¾ full.

5.      Top up with sparkling water or lemonade for fizz.

6.      Give a gentle stir.

7.      Garnish with a pineapple wedge and fresh mint.
