The Bonfire Spark
INGREDIENTS
50ml spiced rum (or smoky whisky if you want extra depth)
20ml ginger liqueur (or ginger syrup if non-alcoholic)
15ml fresh lime juice
10ml honey syrup (1:1 honey + hot water)
Dash of Angostura bitters
Top with ginger beer (for fizz & warmth)
METHOD
Add rum, ginger liqueur, lime juice, honey syrup, and bitters into a shaker with ice.
Shake well and strain into a rocks glass filled with fresh ice.
Top with ginger beer.
Garnish with a cinnamon stick or dehydrated orange wheel or twist of orange peel.
